Peanut Butter Surprise Cookies

These cookies should actually be called "Surprise, these are the best cookies ever" but peanut butter surprise cookies will have to do.
Ingredients:

1/2 cup creamy peanut butter
4 tablespoons unsalted butter, room temperature
1 cup packed light-brown sugar
2 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour (spooned and leveled)
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup granulated sugar, for rolling dough
36 mini peanut butter cups, chilled and unwrapped

Apple Butter

Apple Butter is yet another item you can't find in Finland, so I figured out how to make my own. Makes the house smell amazing too!
Ingredients:

5 1/2 pounds apples - peeled, cored and sorta chopped
1 cup sugar
1 cup brown sugar
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt

This recipe is easy, always comes out moist, and is tasty! It makes 2 loaves and freezes well.

This was the first blog I did when I signed up for Sugar. I didn't belong to any groups then, and also recently remade it, so I thought I'd repost it, now that I belong to KG, in time for fall

Ingredients:

2 cup canned pumpkin
3 cup sugar
1 cup vegetable oil
2/3 cup water
4 eggs
3.5 cup flour
2 Tbsp baking soda*
1.5 Tbsp salt
1 Tbsp cinnamon
1 Tbsp Nutmeg
1/2 Tbsp ginger powder

Pioneer Woman's Chocolate Sheet Cake

The Pioneer Woman wasn't lying when she said this is the best chocolate sheet cake ever. This is my new favorite cake to make. It's so easy and the ingredients are things most of us have on hand anyway.
Ingredients:

For cake:
2 cups flour
2 cups sugar
1/4 teaspoon salt
2 sticks butter
4 heaping tablespoons cocoa
1 cup boiling water
1/2 cup buttermilk
2 beaten eggs
1 teaspoon baking soda
1 teaspoon vanilla

For icing:
1/2 cup finely chopped pecans
1 3/4 sticks butter
4 heaping tablespoons cocoa
6 tablespoons milk
1 teaspoon vanilla
1 lb minus 1/2 cup powdered sugar

Chicken Tikka Masala

This is my favorite Indian dish, and sometimes I crave it uncontrollably. This recipe is adapted from a recipe I found on America's Test Kitchen.
Ingredients:

Chicken Tikka
Garam Masala (this is an Indian spice you can find in the spice aisle of your supermarket)
Cumin
Cayenne Pepper
4 chicken breasts
1 cup plain yogurt
2 tbsp vegetable oil
2 garlic cloves, minced
1 tbsp grated fresh ginger

Masala Sauce
3 tbsp vegetable oil
1 white onion, finely diced
3 garlic cloves, minced
2 tsp grated fresh ginger
1 jalapeno pepper, minced
1 tbsp tomato paste
garam masala (see above)
1 28-oz can crushed tomatoes
2 tsp sugar
1 cup heavy cream
1/4 chopped fresh cilantro leaves
salt

Nutella and Dark Chocolate Chip Oatmeal Cookies

I made these last night and have already eaten half the batch. It made our entire apartment smell like Nutella (I now wish they made Nutella scented candles). They're even more delicious if you spread some extra Nutella on top right before eating them.
It's World Nutella Day in less than two weeks (Feb. 5th) so go ahead and try these cookies. Any reason to bake with Nutella is a good reason.

Ingredients:

- 3/4 cup softened butter
- 3/4 cup lightly packed brown sugar
- 1 egg
- 2 tbsp. water
- 1 tsp. vanilla extract

- 3/4 cup all-purpose flour
- 3/4 tsp. baking soda

- 3 heaping Tbsp. Nutella
- 100 g 70% cacao chocolate chips (about 4.5 oz)

- 2 1/2 cups rolled oats

Finnish Pancakes with Strawberries and Cream

These thin dessert pancakes are the only thing my husband knows how to make and he makes them really well. We usually top ours with strawberries, good quality vanilla ice cream and whipped cream.
Ingredients:

For Pancakes:
300 ml or 1 1/4 cup milk
2 eggs
200 ml or 3/4 cup all-purpose flour
2 tbsp. melted butter
A pinch of salt
50 ml or 3 tbsp. sugar
Butter or oil for frying

For toppings:
Good quality vanilla ice cream
Fresh strawberries (I sliced them and sprinkled homemade vanilla sugar over them and let stand for a while.)
Whipped cream

But you can use anything you like.

Chop an onion - the O.C.D. way

Yum posted an onion advice blog last week, and I tried - unsuccessfully - to describe the way I chop an onion. As I wrote it out, I realized pictures were in order. My methodical way of chopping an onion may feel a bit OCD, but it's the best and most efficient way I've figured out so far. If you have fun/different ways to chop an onion, include it in the comments.

Yes, the sour cream part threw me off, also. But, these are moist and delicious!
Ingredients:

2 cups all-purpose flour
1/4 cup sugar
3/4 teaspoon baking soda
1/4 teaspoon salt
1 large egg, slightly beaten
3/4 cup sour cream
1/2 cup milk
1/3 cup vegetable oil
1 1/2 cups raw cranberries, whole or chopped
1/2 cup sugar

I made this tonight, and we both loved it so much I thought I'd share. It's extremely easy to make, only takes 30 minutes from prep to table, and is quite possibly the lightest and healthiest meal I've ever cooked and enjoyed. Eat up!
Ingredients:

2 6 oz salmon fillets
1 lemon
2 cloves garlic
Couple sprigs of green onion
1-2 heads baby bok choy
Splash of chicken broth or stock
Salt
Pepper
1 tbsp vegetable oil
