Snack Attack: No-Bake Peanut Butter Balls
Peanut butter is one of my all-time favorite foods, so I love to bake with it. But this recipe requires no baking at all. These chewy, nutty treats are made with all-natural peanut butter, wheat germ, rolled oats, and coconut, and no added sugar, so they're a healthy treat you can enjoy anytime. I like to take a couple out on long rides with me instead of an energy bar.

Ingredients
1/2 cup natural peanut butter
1/4 cup nonfat dry milk powder
1/4 cup unsweetened flaked coconut
1/3 cup rolled oats
1/2 teaspoon ground cinnamon
1/4 cup wheat germ
1/4 cup unsweetened apple juice concentrate, thawed
Directions
- Combine peanut butter, milk powder, and coconut in a large mixing bowl.

- Stir in oats, ground cinnamon, wheat germ, and apple juice concentrate until thoroughly combined.

- Shape the mixture into 16 one-inch balls.

- Chill thoroughly before serving, about an hour. Store remaining balls in the refrigerator.

This is hilarious-- my sister had a similar recipe from a kid's cook book when we were little. I think it was peanut butter, powdered milk, and honey....? I can't remember specifically.
I can't stand coconut so I'd probably modify this, but it's a good idea if not a funny memory.

These look delicious!!! I will have to try them, I might make some modifications too, like nuts or maybe something chocolate. I bet Nutella would be a great addition too
Mmm, I would totally make this recipe and add chopped dates - I love that sweet/savoury combination. However, it will probably be a cold day in hell when I actually eat or recreate a recipe which is almost 100 calories per mouthful, I mean, the amount of willpower needed to stop at one or two just makes it not worth it for me

This looks like a yummy variation on the peanut butter balls we used to eat as kids--PB, powdered milk, honey, and a little powdered sugar. I like the idea of using oats and coconut in them. Yum!

I love peanut butter... and chocolate! Great combination! One of my favorite snacks are the Kellogg's FiberPlus(R) Chocolatey Peanut Butter bars because they too combine chocolate and peanut butter. So good!
This is close to a recipe I made when I was like 5 years old (I was still in preschool). Can't remember the recipe we used...but I do know that there are some parts (I remember some of the stuff we used...the only things I am sure we did not use, were the cinnamon, and I know we didn't use juice)
I remember we were missing the coconut (or for some reason it wasn't in my batch) which was a good thing, because (though I hadn't known it when we made them) my Grandmother, whom I was living with at the time) is allergic to coconut. But I have been looking for this recipe for YEARS...would LOVE to make em again
